McConaughey’s Tuna Salad
This is Matthew McConaughey's recipe, with a twist. (I added a few things). If you love a good tuna sandwich, you have to try this. Surprisingly delicious. I basically measure ingredients with my heart for this one. You can do the same, adding more or less of the things you like. It’s terrific on a sandwich with fresh sour dough bread (try making a tuna melt), or in a green or macaroni salad. I end up just eating it with crackers for a quick lunch.
I don’t like raw onion in my salad so I substitute Frenches French fried onion or chopped green onion You do what you like best.
- 1 12 oz. can good tuna (packed in water), drained
- 1/3 cup good mayonnaise (Best Foods, or Helamans)
- 1 tablespoon lemon juice
- 1 tablespoon apple cider vinegar
- 1 teaspoon honey or agave
- 2 teaspoons dried Ranch Dressing mix
- 1 teaspoon wasabi paste
- 2 tablespoons sweet pickle relish (or dill)
- 1/4 cup corn
- 1/4 cup frozen peas
- 1/4 cup green apple, diced
- Fresh Gourmet Crispy Jalapeños (find them in the salad section of the grocery store
- French's crispy fried onions (in the canned vegetable section of the grocery store) OR 1 tablespoons green onion, chopped
In a mixing bowl, add all of the ingredients except the crispy jalapenos and onions. Tastes best if the tuna salad sits overnight to develop the flavors. Stir in crispy jalapeños and onions just before you plan to eat the tuna salad.
