Keto Tuscan Soup

 

  • 1 pound ground sausage
  • 1 tablespoon olive oil
  • 3 cups chicken broth
  • 1 cup  fresh baby spinach or kale chopped. 
  • 5 pieces sun dried tomatoes
  • 1 medium yellow onion chopped
  • 2 tablespoons nutritional yeast
  • 1 cup canned coconut milk unsweetened
  • 1 teaspoon Italian seasoning
  • 4 garlic cloves minced
  • 1/4 cup cream cheese
  • Sea salt and pepper to taste

In a stockpot add heat the olive oil.  
Add the onion and sausage and saute until the sausage is cooked through. 
Drain off the fat. 
Add the remaining ingredients to the pot and heat to simmer. 
Simmer the soup for 20-30 minutes to blend the flavors. 

Makes 5 (1 cup servings)
