Keto Key Lime Cheesecake Bites

  • 1 8oz package cream cheese, cut into 8 cubes
  • 6 oz Thor's Skyr Icelandic Yogurt Plain
  • 1/3 cup Monk Fruit (erythritol) sweetner
  • 2 scoops Vital Protiens Collegen, unflavored
  • 1 2" lime (zested and juice)
  • 1 packet True Lime Cristalized Lime
  • 1 egg
  • 1/4 cup almond flour
  • 1/4 cup pecans
  • 2 tablespoons butter
  • 2 teaspoons Monk Fruit (erythritol) sweetner

Preheat oven to 325 degrees.

Use a cupcake tin - place 10 liners in 10 of the cupcake slots.  Set aside.

For the Crust:

Using a food processor or coffee grinder, chope the pecans until finely ground.  Add the chopped nuts to a mixing bowl and combine with the almond flour, butter, and Erythritol.  Stir to combine.  
Divide the crust mixture evenly among the 10 cupcake liners, and press down with a spoon.

For the Filling:

Place the cream cheese cubes in a food processor and pulse until smooth.
Add the remaining ingredients and pulse to combine.  Mixture should look smooth.
Divide the filling equally among the 10 cupcake liners.

Bake the cheesecakes in the preheated oven for 30 minutes.  Remove from oven and let cool to room temperature.

Please the cheesecakes in the refrigerator.  To serve, top with a littled whipped cream sweetened with erythritol and vanilla.
