Lemony Hummus

I've been trying for the longest time to come up with a recipe that was lemony and flavorful. I finally hit the perfect balance for me -- a lemon lover.  

I use a vitamix blender, so if you are using something else, you might need to process this in two batches. It makes enough for 6 people, or to serve at a party. 

3 - 14 oz cans garbozo beans (chickpeas), drained
2 cloves garlic
1/2 cup olive oil
4 tablespoons Tahini
Zest of 1 large lemon
1 1/2 lemons, peeled and quartered 
1 1/2 teaspoons salt
1/4 teaspoon red pepper flakes
1/4 black pepper
1 teaspoon cumin
3/4 cup hot water

Place the hot water in the blender. Add the remaining ingredients and blend on medium speed until smooth.  

Taste for seasoning. Add more cumin or salt if desired.  And more water if it's too thick.
