Lake Powell Chicken Salad
This is my Aunt Judy's recipe. It will always remind me of family trips to Lake Powell as it was a favorite meal when we spent a week together on a houseboat. One night we decorated the boat with white lights and had a party. This chicken salad was part of soiree. We ended up the evening dancing on the top deck. Good times.... I miss them.
4 cups chicken, chopped fine
6 green onions, white part only, chopped fine
1 cup celery, chopped
¼ cups pecans, chopped
1 cup grapes, cut in half
½ cup Major Grey’s chutney
1 cup mayonnaise
½ cup sour cream
½ - 1 teaspoon ground curry
¼ teaspoon ground pepper
½ teaspoon salt
Chinese pre-packaged chow mein noodles
In a large mixing bowl, add the chicken, onions, celery, grapes, water chestnuts and pecans. Toss to combine.
In a small mixing bowl, combine the mayonnaise, sour cream, and seasonings. Add this dressing to the turkey mixture, and then combine. If the salad is a little dry, add more mayonnaise to taste.
Just before serving, add the Chinese noodles (about 1 cup)
Great on whole wheat bread, croissants, or in cream puff shells as a party sandwich.
