Curried Chicken for People Who Don't Like Curry
In 1983, I took a cooking class with my brother. The chef was Fred Wicks, a popular radio announcer in Salt Lake City, who I later learned was also a gourmet cook. This is one of the recipes he shared at the cooking class. Because of Fred's recipe, I am now a lover of curry!
6 chicken breasts, skin removed
½ cup butter, melted
½ honey
¼ cup Dijon mustard
1 tsp. curry powder
Preheat oven to 350 degrees.
Place chicken pieces in shallow baking dish.
Microwave remaining ingredients for 1 minute and pour over chicken.
Marinate chicken for 2-3 hours.
Bake for 30 - 45 minutes basting occasionally, until chicken is tender. (Cooking time will vary depending upon whether frozen or fresh chicken breasts are used.)
