Salad Greens with Apples and Maple Syrup Dressing
My own recipe.
Salad Ingredients:
1 5-oz. bag mixed baby greens
2 granny smith apples, diced
½ cup craisins
½ cup toasted pecans or sugared nuts (Recipe on this blog, or you can buy them packaged at the grocery store)
3 green onions, chopped fine (I use white part only)
2 Tablespoons crumbled blue cheese
Dressing Ingredients:
¼ cup mayo (I only use Best Foods)
¼ cup pure maple syrup
3 Tablespoons white wine vinegar
2 teaspoons sugar
½ cup vegetable oil

Dressing Ingredients:

½ cup vegetable oil
pinch salt
If you have a blender, place all of the ingredients, except the oil in the blender, and turn it on low to blend. With the motor running, slowly add the oil through the hole in the blender lid, until the dressing forms an emulsion (it looks thick like salad dressing.) Toss about half of the dressing with the salad. Check it for taste and add more to your liking.
This dressing keeps for 8 weeks in the refrigerator. I usually make a double batch so I have it on hand for a quick salad.
If you don’t have a blender, whisk all of the dressing ingredients together by hand, slowly adding the oil at the end until it is well combined with the other ingredients.
