Mel's Southern Sausage Cheese Puffs

This recipe was given to me by a co-worker in 1992. Her name was Mel. She was the woman who faithfully brought treats to work every Friday. We loved her, and we loved it when she brought in her famous sausage cheese puffs.

If you are looking for something to serve for Superbowl Sunday, or.... a "man party", this is it! I mean, what man doesn't like sausage!


6 to 9-oz. shredded sharp cheddar cheese
2 cups Bisquick
1 12-oz. package hot Jimmy Dean sausage, uncooked

Combine cheese and Bisquick in large bowl, cover and let set until the mixture is at room temperature. Pinch off pieces off pieces of sausage and put them in the cheese mixture, then mix it all together with your hands. The dough will look line pink and orange clay when it’s all mixed together.

Shape the dough into little balls. Place on cookie sheet, spaced about 1” apart and bake at 325 degrees for 25 minutes.

If you want, you may freeze the uncooked balls – put them on a cookie sheet in the freezer until frozen, then pace the frozen balls in a baggie. Bake as instructed above.
